Ridge gourd Egg Fry/ Potato Scrambled Egg – Egg Burji – Scrambled Egg Recipes
Its like a 2 minute noodles dish, where you can prepare a healthy and tasty side dish for your sambar rice, or roti very fast.
Ridge Gourd /Potato – 1 big
Egg – 1
Onion – 1 small
Cumin seeds – I teaspoon
Chilli powder – 1 teaspoon or as per your taste
Turmeric powder – a pinch
Salt- as per taste
Oil – as needed
Method:
- Heat oil in a pan and crackle the cumin seeds.
- Then cook the chopped onion until they are see through.
- Add finely chopped ridge gourd or potato and fry along with onion till they are 90% cooked.
(Keep stirring the content especially if it is potato as it might stick to the base of the vessel)
- Add chilli powder, turmeric powder and salt and cook them all nicely.
- Now break the egg into the content, leave it for a few seconds and then scramble the egg to the size you want the egg pieces to be.
