This is a very tasty cum healthy dish for lunch boxes. Planning the menu for the kids lunch boxes is a real challenge every day. Carrot rice can be prepared in no time and packed once in a week. Carrot as we know is rich in beta carotene, which is very good for eyes.
Here goes the recipe:
Ingredients:
Cooked rice (not hot) – 1 cup
Carrot (grated) – 2
Cinnamon – 1
Clove – 2
Onion – 1 small
Green chilli – 1 (I use only half)
Groundnut – 1 tablespoon
Ghee – little
Oil – as needed
Salt – as needed
Method:
- Dry roast groundnuts, peel the skin, grind the nuts in a mixer to a coarse texture. Keep aside.
- Heat oil in a kadai, splutter clove and cinnamon. Fry for a few seconds.
- Add chopped onion and green chilli, cook them till the onion becomes translucent.
- Add the grated carrot and salt, mix them all and fry them all until the carrot is cooked well. You can add a teaspoon of ghee now.
- Now add the cooked rice (should not be hot) to the carrot and sprinkle the ground nut powder.
- Mix them all in a low flame for a few seconds.
- Tasty, healthy carrot rice is ready.
