Schezwan Fried Rice without soy sauce and vinegar
Ingredients
Basmati rice 2 cups
Garlic finely chopped 1 tbsp
Carrot finely chopped ¼ cup
Beans finely chopped ¼ cup
Capsicum finely chopped ¼ cup
Cabbage finely chopped ¼ cup
Spring onion white 3 tbsp
Spring onion green 3 tbsp
Schezwan sauce 2 tsp
Gingelly oil 3 tbsp
Required salt
Method
- First soak the basmati rice for 20 min. Then wash it well. In a pressure cooker add 2 ½ cups of water, rice, salt and 1 tsp of oil. Mix it well. Pressure cook it for 1 whistle. After pressure release cool down the rice to room temperature. Keep it aside.
- Heat a pan with oil, once oil heats add chopped garlic. Saute well. Then add all the veggies one by one. Add capsicum in last. Saute for 1 min, then add salt. Mix it well.
- Then add schezwan sauce. Mix it well.
- Then add cooked rice in 2batches , mix it well.
- Garnish with some spring onion greens.
